Easter cookie cake !

It's never to early for Easter right? When I made this, it was 5 star reviews all round from my family (who I live with) Hope you enjoy.

Ingredients

275g Plain flour

1 Teaspoon Bicarbonate of soda

Half a teaspoon of salt

1 Teaspoon of cornflour

115g Unsalted butter

55g Granulated sugar

135g Dark brown sugar

1 Medium egg

1 Teaspoon vanilla extract

One pack of mini eggs

100g Milk Chocolate (broken into sperate squares) or 100g of milk chocolate chips


Method

1) Line and grease an eight inch circular tin. And pre heat your oven to 190 degrees.

2) Put the flour, bicarbonate of soda, salt and cornflour into a mixing bowl and stir together with a wooden spoon.

3) Melt your butter in the microwave and add the dark brown sugar and granulated sugar and whisk together, until smooth.

4) Add your egg to the sugar and butter mix along with the vanilla extract, then whisk again until smooth.

5) Add the wet ingredients to the dry ingredients.

6) Now you can add in your mini eggs and chocolate squares.

7) Then mix all the ingredients together. Until fully combined, and cookie-dough like.

8) Next pour the mixture into your prepared baking tin, you may need to use a spatula to push the mixture to the very edges of the tin.

9) Pop into the oven for 18-22 minutes.

10) Once the baking time is complete, to check it's cooked push a metal skewer through the centre and if it comes out clean it's done -make sure you don't stab a piece of chocolate!

11) If it is done, take it out of the oven and leave to cool before you tuck in.

12) Once cooled take out of the tin and serve with ice cream anything of your choice. It can be eaten still warm if you can't wait for it to completely cool... in fact, its even more delicious that way!
