Flapjacks with a twist

I think flapjacks are the perfect on the go packed lunch box treat! My mum's friend Melanie came round and said that flapjacks were her favourite so this is for her.


Ingredients

225g Butter

225g Demerara Sugar

75g Golden Syrup

Half a tsp of peppermint extract

275g Porridge oats

100g White Chocolate melted









Method

1. Pre--heat your oven to 160 degrees Gas mark 3 and grease a 30 x 23cm traybake or roasting tin.

2. Melt the butter in a large pan along with the sugar, syrup and peppermint extract.

3. Add in the oats then spoon your mixture into your prepared baking tray.

4. Bake in a pre-heated oven for about 35 minuets or until a pale golden brown colour.

5. Once cooked leave in the tray to cool for 10 minutes.

6. Melt your chocolate in the microwave for 30 seconds then give it a stir if it is not completely melted put back in for a further 10 seconds.

7. Use a spoon to drizzle the chocolate over your flapjacks and place in the fridge to cool.

8. Once set cut into 24 pieces and enjoy eating them for up to 1 week. Store in the fridge in an air tight container.
