Lucas's Cloud 9 Cookies

Lucas wanted to make some cookies because he was really bored. He had done all his home schooling work and needed something to do. So he found a recipe for chocolate and cherry cookies but we didn't have any cherries so he used marshmallows and had invented CLOUD 9 COOKIES!
Ingredients 75g butter
75g caster sugar
75g soft light brown sugar
1 egg
1 tea spoon of vanilla extract
175g plain flour
Half a teaspoon of baking powder
2 Large handfuls of mini marshmallows
150g plain chocolate (chunks or chips)
What to do
1.Heat the oven to 180 degrees and line 2 medium baking trays.
2.Put the butter and both types of sugar into a medium bowl and stir together with a wooden spoon until the mixture is smooth and creamy.
3.Break the egg into a small bowl and beat with a fork.
4.Add the vanilla extract to the whisked egg then add to the sugar and butter mix.
5.Next sift the flour and baking powder into the sugar and egg mix, Stir the mixture until smooth, and then add the marshmallows and chocolate chunks.
6.Combine together until all mixed.
7.Slightly wet you hands and get a handful of the mixture .Roll into a ball (no bigger than a ping pong ball) and place them gently onto the tray with space for them to grow.
8.Pat them slightly down and put into the oven for 12-15 mins or until golden brownish.
9.Once ready leave them to cool otherwise you'll burn your mouth on the marshmallow!
10.When they have cooled you can help yourself to one of Lucas's melt in the mouth Cloud 9 Cookies.
