RAINBOW PASTA !!!

My parents are always telling me to eat a rainbow of food. So when I was making up a family lunch I found all sorts of veg that were different colours, then just kept adding them to the pan to make it more healthy.













Ingredients

Half of a chorizo sausage (about 150g)

1 red onion (finely chopped)

1 teaspoon of oregano

4 big runner beans

1 clove of garlic (finely chopped)

2 big handfuls frozen peas

2 big handfuls sweetcorn

2 tablespoons of pesto

1 red pepper (roughly chopped)

1 packet mozzarella balls (about 250g)


Enough pasta for whoever you're feeding. I used about 75g dry fusilli per person.


Method

1 prep all you food (onions, pepper, beans, chorizo) and start to cook your pasta in a separate pan.

2 In a medium frying pan start to fry your chorizo and when it has released it's nice golden oil start to fry your onions & add in you oregano.

3 Next, in the same pan start to cook your beans and garlic and then add in your frozen peas and sweetcorn. 4 Now you are ready to add your pesto, and pepper into your pan.

5 When your pasta is nearly ready drain out the water and add the pasta to your frying pan of rainbow veg.

6 Finally add in your mozzarella balls and wait until they're nice and gooey but are still visible.

7 Serve into your bowls and eat with a topping of cheddar cheese.
