Yummy Scrummy Crunchy Granola

My yummy granola is perfect for after a morning work out. Once made you can keep this in the cupboard for up to two weeks (although it will be gone long before then!!!)


This is perfect sprinkled on flavoured yoghurt or with fresh fruit. (check out my other blog entry for how to make the yoghurt mix).







Ingredients:

200g rolled oats

1 teaspoon of Cinnamon

150ml Maple Syrup or Honey

3 tablespoon of Coconut Oil (melted)

1/2 teaspoon Almond Extract

1 Handful of your favourite dried fruits or nuts (I chose Cranberries and Raisins)


How to make it:

1. Preheat the oven to 160C

2. Line a large baking tray with parchment.

3. In a medium pan, melt the Coconut Oil, Maple Syrup and Almond Extract together.

4. In a large bowl, add the Oats & Cinnamon and carefully pour in the melted liquid.

5. Gently mix together until all the oats are coated then spread loosely on the baking tray.

6. Bake in the oven for 20-25mins to allow the mix to dry out, shuffle it every 5 mins to avoid it all clumping up.

7. Leave to cool completely (at least 45mins) then add your chosen fruit or nuts.


Store in an air tight container and sprinkle over your porridge, yoghurt or just nibble constantly like I did :)
